Solar Oven Gochujang Pineapple Satays

Gochujang is a thick paste used in Korean cooking. Its so thick, they sometimes use it to patch up relations with Kim Jong up north. But it is a delicious fermented rice, soybean, chili condiment. That little kick is really nice with the sweet pineapple.

Solar Oven Gochujang Pineapple Satays

Ingredients:

2 cups diced Pineapple, 1 inch cubes

2 green bell peppers, cut into 1 inch pieces

6 boneless skinless chicken thighs, cut into 1 inch pieces

1 can coconut milk

2 TB gochujang

Skewers

Directions:

Mix the coconut milk with the gochujang. A blender works best here since it is quite thick. Pour this over your chicken pieces and let marinate for an hour.

To skewer the Satays, just alternate chicken, Pineapple, and pepper. No need to soak the skewers here like when you’re grilling, there’s no open flame to char the wood we are using a sun oven.

Place the Satays in the GoSun solar oven insert and let roast for 30 minutes. Serve with white rice, garnished with basil or cilantro leaves.
